A great meal or a quick bite. These really simple to make savory sandwiches, seasoned with curry paste and chutney, come together quickly for a picnic or lunch or snacks. This is really simple to make and tastes simply divine.

Ingredients

  • 1 tsp Patak’s® Mild Curry Spice Paste
  • Patak’s® Sweet Mango Chutney to taste
  • 1 medium tomato, de-seeded and small diced
  • 1 medium onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1 tsp fresh cilantro, chopped
  • 2 eggs
  • 1 tbsp oil
  • 4 bread slices
  • Butter to spread
  • Salt to taste

Instructions

  1. In a frying pan (medium sized) heat oil and sauté onions, tomatoes, and green chili (if using).
  2. Add Patak’s® Mild Curry Spice Paste and sauté for 1-2 minutes until the paste is evenly cooked.
  3. Whisk 2 eggs with a bit of salt and add to the sautéed vegetables
  4. Sprinkle fresh cilantro and cook like an open omelet.
  5. Toast 2 sliced breads, butter the toast and make a sandwich using omelet as filling.
  6. Spread some Patak’s® Sweet Mango Chutney and serve hot.

Notes

If you enjoy heat, use Patak’s® Hot Mango Chutney instead or for ginger notes use Patak’s® Major Grey Chutney.
