This classic dish has been given a delicious spicy twist with Patak's® authentic Mild Curry Spice Paste. It tastes sublime. This is a wonderful and really simple way to shake up your dinner - literally!

Ingredients

  • 3 tbsp Patak’s® Mild Curry Spice Paste
  • 2 tbsp melted butter
  • 1 clove garlic, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tsp black pepper, coarsely crushed
  • 1 whole chicken 2 kg (6 oz - 8 oz)
  • 1 onion, quartered
  • 1 carrot, sliced
  • 1 celery stick, sliced
  • 4 tbsp oil
  • 1 lemon, quartered
  • 2 tbsp all-purpose flour

Instructions

  1. In bowl mix together the butter, garlic, cilantro and black pepper. 
  2. Rub the chicken inside and out with the spiced marinade. 
  3. For a more intense flavor, carefully loosen the skin and rub the marinade onto the breast of the chicken as well. 
  4. Cover and refrigerate the marinated chicken for two hours or even overnight. 
  5. Preheat the oven to 375°F. 
  6. Place the onions, carrots and celery in a large roasting tin and toss in the vegetable oil. 
  7. Stuff the lemon into the cavity of the chicken and place on top of the vegetables. 
  8. Cover with foil and roast for 20 min, for every additional 17 oz add 20 min. 
  9. Remove the foil for the final 30 min of cooking time so the chicken is golden, the juices will run clear when the chicken is cooked through. 
  10. Remove the chicken from the roasting tray and rest. 
  11. Place the roasting dish on the hob on medium heat. 
  12. Once the onions begin to sizzle skim any fat on the surface. 
  13. Stir in the flour and cook for two minutes. 
  14. Slowly whisk in the hot chicken stock, making sure there are no lumps. 
  15. Add the Patak’s® Mild Curry Spice Paste and continue to cook until the gravy has thickened.
  16. Adjust the seasoning to taste
