Madras Spice Paste

Ingredients

  • 2 tbsp Patak’s® Madras Spice Paste
  • 5 large mushrooms (for stuffing), stems removed and finely chopped
  • 1 tbsp oil
  • 1 small zucchini, finely chopped
  • ½ red pepper, sliced
  • Zest of 1 lemon
  • 1 cup lettuce or mixed salad leaves
  • 1 cup basmati rice
  • 1 tsp water
  • 1 lemon, cut into wedges (garnish)

Instructions

  1. Preheat the oven to 400 °F.
  2. Heat a non-stick frying pan and add the oil.
  3. Fry the mushrooms stalk, zucchini and red pepper for 1 min.
  4. Stir in the Patak’s® Madras Spice Paste, add water and cook for 2 min.
  5. Meanwhile, cook the basmati rice as directed on the pack and then stir into the pan with the lemon zest.
  6. Place the mushroom buttons on a baking sheet, pile the filling on top and bake for 15 to 20 min, covering with foil to prevent the rice from drying out.
  7. Serve with lettuce or mixed salad leaves and lemon wedges.
