Ingredients

  • 2 tbsp Patak’s® Madras Curry Spice Paste
  • 2 tbsp plain Greek yogurt
  • 1 clove garlic, finely chopped
  • 1 ¼ cup broccoli florets
  • 1 red pepper, sliced
  • 1 tbsp pine nuts
  • Fresh cilantro, chopped (garnish)

Instructions

  1. Preheat the oven to 350°F. 
  2. In a large bowl, mix together the Patak’s® Madras Curry Spice Paste, the yogurt and the garlic. 
  3. Add the broccoli and the red pepper, and toss well to coat completely. 
  4. Transfer the mixture to a roasting pan and bake for 20 to 25 min, stirring once or twice. 
  5. If the vegetables start to brown, cover with foil. 
  6. Add the pine nuts and cook for another 5 min. 
  7. Sprinkle with fresh cilantro before serving.
