Korma Simmer Sauce

Ingredients

  • 8 hard boiled eggs
  • ¼ cup mayonnaise
  • ¼ cup Patak’s® Korma Simmer Sauce
  • 1 tbsp green onion, finely chopped (garnish)
  • ¼ cup red pepper, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 1 tbsp white vinegar
  • Paprika, to taste

Instructions

  1. Place the eggs in a saucepan with 1″ of water. Bring to a boil, reduce to low heat and cook for 10 min.
  2. Place the eggs under cold running water and peel the eggshells.
  3. Slice the eggs lengthwise and empty the yolks into a mixing bowl.
  4. Place the whites on a serving plate.
  5. Mash the yolks into a fine crumble.
  6. Add the mayonnaise, the Patak’s® Korma Simmer Sauce, the red pepper, the fresh cilantro and the vinegar, and mix well.
  7. Divide or pipe the yolk mixture evenly into egg white halves.
  8. Top with green onions and sprinkle with paprika.
