Using Patak’s® Sweet Mango Chutney and Patak’s® Mild Curry Spice paste, liven up your table with this delicious, quick, simple bake, perfect for a lazy evening dish.

Ingredients

  • 2 cups new baby potatoes, cut in half if large
  • 2 tbsps vegetable oil
  • 4 tbsps Patak’s® Mild Curry Spice Paste
  • 2 tbsps Patak’s® Sweet Mango Chutney
  • 8 shallots, skin removed
  • 1 bulb garlic, broken into cloves, skin left on
  • Few sprigs fresh rosemary
  • Thick plain yogurt, to serve (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Mix all ingredients together and roast in the oven for 45 minutes, stirring halfway through, until the potatoes are starting to crisp on the edges.
  3. Serve with some cooling yogurt or a fresh Cilantro & Mint Chutney.

Notes

If you enjoy heat, use Patak’s® Hot Mango Chutney instead or for ginger notes use Patak’s® Major Grey Chutney.
