Bombay Potatoes
Children and adults alike will devour these potatoes! This dish is one of the most popular ways to prepare potatoes in India. Serve hot as a side dish to any meal.

1 pound (3 medium) potatoes
2 tablespoons vegetable oil
1 teaspoon black mustard seeds OR cumin seeds
1 medium onion, finely chopped
1 to 2 cloves garlic, minced
1 tablespoon Patak’s® Mild Curry Paste
½ teaspoon salt (optional)
1 tablespoon finely chopped cilantro |

Peel and cut potatoes into ¾ inch pieces. Boil until cooked through. Set aside.
Heat oil in a medium nonstick skillet over medium-high heat. Add mustard OR cumin seeds. Fry for few a seconds until mustard seeds start to 'pop' or cumin seeds are roasted (you'll know by the delicious smell and they will start to change color).
Add onions and sauté until golden brown. Add garlic, Curry Paste and salt (optional); sauté for a few seconds.
Add the potatoes. Cook for about 5 minutes, carefully lifting and turning potatoes with a wide spatula so as not to break them. Reduce heat to medium and cook the potatoes for another 8 to 10 minutes, stirring occasionally.
Transfer to a serving dish. Garnish with cilantro and serve warm. |
